Slow Mornings & Stacked Plates: Reclaiming Your Weekends (Plus Our Go-To Power Pancake Recipe!)

If you’ve spent the last few months trading your sleep-ins for frosty sports sidelines, refereeing frantic pre-dawn breakfasts, and trying to find sport uniforms and footy boots in a sleepy haze, take a deep breath..... Winter sports season is officially wrapping up. 


For so many families, winter weekends are a blur of early alarms, warm layers, muddy boots, and clock-watching. While watching the kids play sport can be exciting + fulfilling, the sheer logistical marathon of getting everyone out the door on time can leave parents completely exhausted by the time Monday rolls around.


That is why the shift in seasons feels so liberating. Getting your weekends back means reclaiming your mornings. It means trading the rushed toast-in-the-car routine for slow coffee, cozy pyjamas, and breakfast moments that actually feel relaxed.

The Ultimate Slow-Morning Fuel


When you finally have the time to enjoy a leisurely breakfast, you want something that tastes like a weekend treat but still delivers the clean, nourishing energy your active kids need—without the sugar crashes that derail the rest of the day.


That’s where our Rock it Fuel Pancakes come in. 


Adapted from Sabine Venier’s fantastic ‘Gluten-Free Protein Pancakes’ recipe, these are a staple in our house. They are incredibly quick to throw together, naturally wholesome, and loaded with the steady, sustained energy of Rock it Fuel. 


Here is how we make them:


Rock it Fuel Power Pancakes

Prep time: 5 minutes | Cook time: 10 minutes | Servings: 8 pancakes


Ingredients:

  • 1 ½ cups rolled oats (you can substitute plain flour or your favourite gluten-free flour blend)

  • ½ cup Rock it Fuel

  • 2 tsp baking powder

  • 1 pinch salt

  • 2 large eggs (at room temperature)

  • 1 cup milk of your choice

  • 2 tbsp melted butter, ghee, or coconut oil (cooled!), plus extra for cooking

  • 1 tsp vanilla extract


Method:

  1. Blend the Dry Base: In a food processor, add the rolled oats and blend until they resemble a fine flour. Add in your Rock it Fuel, baking powder, and a pinch of salt, pulsing until everything is well combined.

  2. Whisk the Wet Ingredients: In a separate mixing bowl, whisk together the eggs, milk, cooled melted butter (or oil), and vanilla extract until smooth.

  3. Combine: Pour the wet ingredients into the dry ingredients and mix gently until just smooth. Let the batter rest for 5 minutes—this helps the oats absorb the liquid and makes for fluffier pancakes!

  4. Cook to Golden Perfection: Heat a little coconut oil or butter in a frying pan over medium heat. Pour in approximately ¼ cup of batter per pancake, spreading it gently into a neat circle if needed.

  5. Flip and Finish: Cook for 2 to 3 minutes until you start to see little bubbles forming on the surface. Flip them over and cook for another 1 to 2 minutes until golden brown and cooked through. Repeat with the remaining batter, adjusting the heat as needed.

  6. Serve and Enjoy: Stack them high and serve with your family's favourite toppings. In our house, we love sliced banana, fresh berries, a dollop of Greek yogurt, a dusting of cinnamon, and a light drizzle of maple syrup.


A Quick Chef’s Tip:

Keep an eye on your batter consistency! You may need to tweak the amount of milk slightly. You don’t want it so thin that it spreads across the whole pan like a crepe, but if it’s too thick to pour into a nice circle shape, just splash in a little extra milk.

Then you'd better order some more! But in the meantime, you can try these options instead...


Replace 1/2 cup of Rock it Fuel with:

  • Unflavoured Protein Powder (1/4 cup): Try collagen, hemp, whey or whatever you have on hand. Plus,

  • Raw Cacao Powder (1 1/2 tbsp). Plus,

  • Coconut Sugar (1 1/2 tbsp)


Or

  • Chocolate Flavoured Protein Powder (1/2 cup)


Or

  • Vanilla Flavoured Protein Powder (1/3 cup) Plus,

  • Raw Cacao Powder (2 tbsp).


Add these ingredients in at Step 1, and follow the rest of the recipe as set out above.
